The Sakai Takayuki Aogami Super Kurouchi range features a core of Aogami super blue steel with two layers of hammered (Tsuchime) stainless steel on the outside with a Kurouchi (blacksmiths) finish. The contrast is stunning and the hammered finish aids in food release off the blade. The handles are Octagonal Zelkova (Japanese Elm) with a Mahogany ferrule. The core steel is heat treated to 65 HRC which provides excellent edge retention and will develop a patina over time as it reacts with the acids and moisture in your food. Ensure you dry the cutting edge after use
